Savory Shepherd’s Pie 2023 Edition

It’s been a hot minute since I’ve posted a recipe. With all the movie remakes as of late, I thought it’d be fun to redo the first recipe I ever posted on this blog.

Today, I threw the ingredients in an insulated bag and prepared it at my mother-in-law’s house. The ratio of veggies to potatoes to meat is perfect. Since my first recipe posting, I had a couple of toddlers and a grown business, so my recipe measurements aren’t quite as exact, and that’s okay.  You can’t mess this dish up.

Ingredients

1 stick butter

1 container of mushrooms diced

1 onion diced

1 pound ground beef

2 dashes of A1 Sauce

2 splashes of red wine – your choice of what you want to drink while cooking if you’re into that

3 cups frozen mixed vegetables

6 servings of boxed potatoes which would be 2 cups water, 3 tablespoons of butter, dash of salt, 1 cup milk, and 2 cups of potato mix

Instructions

Preheat your oven to 375 degrees..

  1. Heat your saute pan on medium with some oil.  Then, add cook your onions and mushrooms.  Add your ground beef and chop and mix into your mushroom / onion mixture.
  • While the beef mixture is cooking, nuke the mixed frozen veggies with a couple of tablespoons of water in the microwave for 5 minutes.
  • Cook the potatoes by boiling the water, butter and salt.  Then remove from stove and add milk before whisking in potatoes. I personally add a dash or two of half and half or heavy whipping cream and some more butter for taste.
  • After your beef cooks, add some A1 sauce and red wine and cook for another 5 minutes.
  • At this point, add the beef mixture into your dutch oven or bake dish that you have already prepped with non-stick spray.  Then, add your veggies.
  • Top with the potatoes gently press and smooth into pan.  Polishing off the dish with about a cup of shredded cheese.
  • Bake on 375 degrees for 10 minutes with 3 to 5 more minutes at broil to crisp up the cheese.
