Unless I’m meeting with someone over lunch, I tend to bring my lunch. As of late, I’ve been packing sandwiches, carrot sticks, applesauce and the standard fare, but I would like something a bit more flavorful and FRESH.
Today, I started a “Brown Bag Lunch” board on my Pinterest — https://www.pinterest.com/zingzapper/brown-bag-lunch/ — so I can accumulate some tasty recipes.
This week, I made the grape chicken salad with maple pistachios and some white bean kale. To mix it up, I will do some avocado tomato sandwiches with Ezekiel bread later in the week. Sure beats lunch meat. It’s incredible how quickly processed foods can invade your diet again.
