Ingredients
1 premade pie crust (optional)
3 strips of bacon
1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
6 eggs, beaten
2 cups shredded italian blend cheese (or whatever you like)
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
Directions
Preheat oven to 350 degrees F. Lightly grease a pan (pie, bread, or 8×8 will work). If making crusted quiche, place pie crust in pan and cook for 10 minutes. Or you can make a crustless version.
Cook bacon until starting to brown in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine eggs, cheese, salt, garlic and pepper. Add spinach mixture and stir to blend. Spread into pan (crusted or crustless). Bake in preheated oven until eggs have set, about 30 minutes (check after 25 minutes). Toothpick or fork should come out clean. Let cool for 10 minutes before serving.
*Please note if you are going to a large event, you can double the recipe and use two pie crusts in a large disposable full-sheet cake pan. Cook time will be longer but it’s still an easy potluck recipe.
